Diet plays a crucial role in ayurvedic management of any condition.It is one of the key factors that aids in the treatment of a disease or balancing the doshas.
The 3 key factors are AAHAR( diet), VIHAAR(daily regime) and AUSHADH(medicines) .In the absence of aahar and vihaar, we can’t expect aushadh to act well.
The very base of a diet lies in the selection of the ingredients and hence the dishes.There are six types of tastes -sweet, sour, salty, bitter, pungent and astringent.Similarly in Ayurveda,we call these tastes as rasa and they are also called “shad - rasa”(six tastes).
Sweet is madhur,sour is amla,salty is lavana,bitter is tikta, astringent is kashaya and pungent is katu.These shad- rasa have properties that relates to the tri- doshas. That means when consumed either some pacifies the doshas or aggravates them.
As we know human body is composed of three doshas which defines its prakruti( constitution of the body).Vatta , pitta and kapha are present at the cellular levels and they play an important role in the functioning of all the cells and tissues .
Its the balance in these three doshas that represent a healthy body and the imbalance that brings out the diseased state o f the body.In the way the aahar , vihaar and aushadh effects the doshas and hence can alter the disease state into a healthy one.
So if we choose the aahaar of the patient according to the doshik state of his body by selecting specific rasa, we can enhance his/ her recovery..
Madhura rasa(sweet),amla(sour),lavana(salty)pacifies vatta but aggravates kapha.
Tikta(bitter),katu(pungent),kashaya(astringent)pacifies kapha but aggravates vata.
•Madhur, tikta , kashaya pacifies pitta dosha.
•Amla , lavana , katu aggravates pitta dosha.
